Produced in limited quantities, it is a blend of premium oils from select organically grown Caninese, Frantoio, and Maurino olives, harvested between the last week of September and the first week of October. It is a versatile oil with a harmonious and enveloping fruitiness, balsamic notes of medicinal herbs, mint, and rosemary, and delicate spicy accents of black pepper and sweet almond. Bitterness and spiciness are well-presented and balanced.
